Tempura, one of the most quintessentially Japanese dishes, has its origins in the West as the Portuguese introduced it n the fifteenth century. Like so many foreign cooking styles and ingredients, tempura found its way into the Japanese kitchen and is now at the very centre of Japanese cuisine.
This recipe is tempura at its simplest: light and crispy prawns served with nothing more than seasoned salt.
