Many people outside Japan think that nigiri zushi, or ‘hand-formed’ sushi, is the only kind of sushi. But in the fourteen hundred years that sushi sushi has been evolving, nigiri is a cooperative newcomer. Nigiri zushi is also known in Japan as Edomae zushi.
Today, nigiri sushi is undisputedly the most popular kind of sushi both inside and outside Japan.
Particularly within Japan, however, nigiri is considered bet left to expert sushi chefs and is rarely made at home, on the grounds that there is more to the art of sushi making than just shaping the rice and putting a slice of raw fish on top.
